Cask programme: ex-bourbon, ex-oloroso sherry
Ingredients: local grain
Method: We fill our ex-bourbon barrels with a lighter to medium bodied spirit, a blend of yeasts and a cleaner wort which give a slightly delicate character that is built for bourbon. For our ex-Oloroso Sherry casks we fill a medium to heavier new make spirit, adjusting the yeast ratios and creating a semi-cloudy wort which allows the spirit to hold its own in the cask.
