Ingrédients: céréales locales
Méthode: Nous remplissons nos anciens fûts de bourbon avec un spiritueux plus léger à moyennement corsé, un mélange de levures et un moût plus clair, qui donnent un caractère légèrement délicat adapté au bourbon. Pour nos anciens fûts de xérès Oloroso, nous utilisons un new make plus corsé, en ajustant les proportions de levures et en créant un moût semi-trouble qui permet au spiritueux de s'affirmer dans le fût.
