Ingredientes: cereal local
Método: Llenamos nuestras ex barricas de bourbon con un destilado de cuerpo más ligero a medio, una mezcla de levaduras y un mosto más limpio, que dan un carácter ligeramente delicado adecuado para el bourbon. Para nuestras ex barricas de jerez Oloroso, llenamos un new make de cuerpo medio a más intenso, ajustando las proporciones de levadura y creando un mosto semiturbio que permite al destilado imponerse en la barrica.
